What it is

Rice stir-fried with diced vegetables, liver or shrimp and curry powder, which gives the grains their yellow-green colour. The rice is parboiled and cooked in seasoned stock so that the grains stay separate rather than soft.

How it is eaten

Served in a mound alongside jollof rice, fried plantain and a piece of chicken, beef or fish, often with coleslaw or moi moi.

Cultural significance

Fried rice is one half of the standard Nigerian party plate, served beside jollof rice so guests can take both. It is treated as the more delicate of the two, judged on whether the grains are loose and the vegetables still bright. Curry powder rather than soy sauce is what marks the Nigerian version out from the East Asian dishes it borrows its method from.
